Summer Fruit Sushi

Now that summer is nearly here, the plethora of fresh fruit available is astounding.  Between the farmer’s markets and the groceries, fruit choices are plentiful and reasonably priced.

Both of my kids love being able to head to the store and choose new varieties of fruit to sample and enjoy.  They are perfectly content to simply eat it right out of the containers or in a fruit salad, but sometimes, it’s more fun to do a little something special!

We made fruit sushi a few days ago when we had a fridge full of fresh fruits begging to be eaten.  They were very easy to make and the kids were happy to create their own sushi!

Make your own!

Mix a bit of cream cheese with a teaspoon of sugar and a dash of vanilla and spread it on a multi-grain tortilla.  It tastes similar to vanilla yogurt, but is a better consistency.  Yogurt is too runny, we learned that in our first test run.

Line one side of the tortilla with rows of fruit–sliced grapes, strawberries, pineapple, cantaloupe and blackberries all worked well.

Roll the tortilla tight–the thin layer of the cream cheese mixture acted as the “glue” to hold the tortilla wrap together.

Wrap the now-rolled tortilla in a bit of plastic wrap or foil and chill it in the refrigerator for about an hour.

Remove wrap and slice carefully with a very sharp knife.

Serve immediately or refrigerate for later use.
