Raw Vegan Cookie Dough Bites

When I heard that Today’s Mama was going to have a Bake-Off – and wanted our favorite cookie recipes – I rejoiced.  I have lots of favorite cookie recipes!  My mom is the Queen of Delicious Cookies, and I have access to cookie recipes that would make Martha Stewart green with envy.

But then I realized I was actually going to have to bake them and my excitement started to fade.  Because as much as I love these cookies, I never actually bake them.  Cooking is a life skill I have yet to master.  Honestly, I can count on one hand the times I’ve baked cookies all on my own (from scratch – the take-and-bake cookies from the grocery store don’t count).  But even worse, it would take two hands to count the years it’s been since I last baked those cookies (I know, what kind of mom am I, right?!).  And since my mom is out of town and I couldn’t have her come over and make a batch of chewy oatmeal butterscotch cookies for me, I had to get creative.

It just so happens that last week I made these delicious Raw Vegan Cookie Dough Bites that I found on Whole Figured.

I should be very clear…I am not a vegan, or even a vegetarian.  But lately my eating habits have been shifting towards a more plant-based diet, and I’ve been seeking recipes (for things that are easy to make) that are vegetarian or even vegan.  Something that is also raw and doesn’t involve firing up the stove is even more likely to be something I am capable of making, so this recipe really appealed to me.

Now, I did add some super-rich and extra-delicious milk chocolate chips (see, this is why I’m not vegan!), which technically make this  a vegetarian recipe, but that was the only adjustment I made.

I should note here that because you’ll be grinding up nuts (almonds and walnuts), you’ll need a capable blender.  Mine kind of…died…and I ended up having to mix the agave and vanilla in by hand, but this was really no biggie.  It took just a few minutes to prepare the “dough” – much less time that I would have spent on real cookies.

I let my three-year-old help roll the “dough” into balls, and he was a stellar helper (once I got him to stop eating it).

The finished product?  Delicious.  The main ingredients are almonds, walnuts, oat flakes and agave…all things my son would never eat on their own.  But together, and shaped like a lump of cookie dough?  He devours them, and I feel a little bit smug that he’s eating something mostly-healthy.  Also?  They satisfy my craving for sweets and help keep me on the straight and narrow when ALL I WANT IS SOME CHOCOLATE, PEOPLE!

      They really are good! And easy to make, so even if you don’t like them, it’s not like you will have wasted the whole day in the kitchen. 🙂

      Yes, super simple! I would guess 15 minutes start to finish (and then they sit in the freezer for an hour, but the actual making them part is fast).
